100% pure Massachusetts maple cream produced from our maple syrup. Cook the syrup another 15 degrees or so, cool it fast, stir patiently until it just “loses its shine,” pour like mad before it crystallizes into a solid block, and you have the most delicious spread that you've ever tasted. Also known as maple spread or, in Vermont, as maple butter (but it contains no dairy). Margie makes the maple cream in five pound batches so that it is always fresh, but it will keep for months.
